
These spiced applesauce muffins are great for breakfast or Sunday brunch or anytime!
- 1 cup butter or margarine, softened
2 cups granulated sugar
1 teaspoon vanilla extract
2 large eggs
4 cups all-purpose flour
3 teaspoons ground cinnamon
2 teaspoons baking soda
2 teaspoons ground allspice
1 teaspoon ground cloves
1 (16-ounce) can applesauce
3 tablespoons powdered sugar
- In a bowl, cream together softened butter, sugar, vanilla, and eggs.
- In another bowl, sift together flour, cinnamon, baking soda, allspice, and cloves. Combine with the egg mixture and mix well.
- Add applesauce and stir until just blended. Spoon into two 12 cup greased muffin tins and bake at 350°F (175°C) for 15 to 20 minutes. Sprinkle with powdered sugar.
Makes 2 dozen muffins.

Great recipe for snacks. Perfect for camping. The other day my associate argued with me about my choice of cinnamon for our muffin and here you are with 3 teaspoons ground cinnamon. So she now sees it is routine recipe practice. When I see recipes with cloves, I value them so much because I always remember what our part time culinary instructor said. She was of Asian origin and also a plant medicine enthusiast. She said cloves have antibacterial, antiviral and antifungal properties. So their presence in food is of medicinal effect.
