Super Easy Fruit Salad

You can use any nice fruits that are in season in this easy recipe.
You could even change the flavor of canned pie filling; the combinations are endless.

Prep Time: 20 minutes

Total Time: 20 minutes

Ingredients:

  • 2 cups sliced strawberries
  • 2 cups green grapes
  • 3 kiwi fruit, peeled and sliced
  • 3 bananas, peeled and sliced
  • 2 Tbsp. lemon juice
  • 21 oz. can peach or apple pie filling

Preparation:

In large bowl, combine strawberries, grapes, kiwi fruit, and bananas. Sprinkle with lemon juice, then gently mix in pie filling. Chill for 1 hour before serving. 10 servings

Watermelon Fire and Ice Salsa

Ingredients

  • 3 cups chopped watermelon
  • 1/2 cup chopped green bell pepper
  • 2 tablespoons lime juice
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon chopped green onions
  • 1 tablespoon chopped jalapeno pepper
  • 1/2 teaspoon garlic salt

Directions

  1. In a large bowl, combine the watermelon, green bell pepper, lime juice, cilantro, green onions, jalapeno and garlic salt. Mix well and serve.

Chocolate Banana Crepes

Ingredients:

2 cups Bisquick
1 1/2 cups milk
2 eggs
2 bananas, thinly sliced
1 jar Nutella or melted chocolate
1 stick of butter

Directions:

Mix together in a large bowl all of the bisquick, 1 cup of milk, and the two eggs. Next add the remaining milk until well mixed.

Grease a crepe pan with some butter. Pour crepe mixture onto pan in a large, thin circle. Spread out mixture by lifting up the pan and tilting it in different directions. Flip crepe once it bubbles and cook on other side.

Once cooked, gently place crepe open face on a plate and spread a very thin layer of the chocolate or Nutella on one side of the crepe. Place 3 or 4 slices of banana on top. Then fold up the crepe.

Apricot Salad

INGREDIENTS:

  • 1 (6 oz. pkg. apricot jello)
  • 1 no. 2 can crushed pineapple
  • 1 cup water
  • 1 (8 oz.) pkg. cream cheese
  • 1 large can apricots
  • 1 large cool whip or one cup whipping cream whipped
  • 1 cup nuts, chopped (optional)

 

DIRECTIONS:

  1. Cook jello, pineapple and water for ten minutes and cool.
  2. Mix cream cheese with enough juice from the apricots to make it soft and creamy.
  3. Drain and quarter apricots.
  4. Mix all ingredients together. 
  5. Put in large mold or 9 x 13 pan.
  6. Let set overnight.

Serves 15.

Easy Apple Crisp

Autumn is the perfect time for apple recipes!

INGREDIENTS:

  • 5 – 6 apples, peeled and sliced
  • 1 cup flour
  • 2/3 cup sugar
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 1 egg, unbeaten
  • 1/2 cup oil
  • 3/4 tsp. cinnamon

 

DIRECTIONS:

  1. Grease an 8-inch baking dish.
  2. Fill with sliced apples.
  3. In a separate bowl, crumble together the flour, sugar, baking powder, salt, and the unbeaten egg.
  4. Sprinkle mixture evenly over the apples.
  5. Pour oil over topping.
  6. Sprinkle with cinnamon.
  7. Bake at 350 degrees for 35 – 40 minutes.
  8. Serve warm.

INGREDIENTS:

  • 1 cup diced pineapple
  • 1 cup mandarin oranges
  • 1 cup shredded coconut
  • 1 cup mini marshmallows
  • 1 cup sour cream

 

DIRECTIONS:

  1. Mix together pineapple, oranges, coconut, mini marshmallows and sour cream.
  2. Chill.

Apple Crumb Pie

What better time of year to make this recipe than now?

INGREDIENTS:

  • 4 large tart apples
  • 1 pie shell
  • 1/2 cup sugar
  • 1 tsp. cinnamon
  • 1/2 cup sugar
  • 3/4 cup flour
  • 1/3 cup butter

 

DIRECTIONS:

  1. Preheat oven to 400 degrees.
  2. Peel and slice applies, arrange in pie shell.
  3. Mix 1/2 cup sugar with 1 tsp. of cinnamon and sprinkle over apples.
  4. Sift remaining sugar, flour, and cinnamon for topping.  Cut in butter for crumbly.
  5. Sprinkle over top of pie.
  6. Bake for 40 – 50 minutes or until brown.

Berry Oatmeal

INGREDIENTS:

  • Oatmeal of your choice
  • Raspberries
  • 1 tbsp. brown sugar
  • Fat-free half & half

 

DIRECTIONS:

  1. Make oatmeal the way you prefer (on stove or in microwave).
  2. Layer raspberries in the bottom of a bowl and add oatmeal.
  3. Sprinkle brown sugar and mix in half and half.

 

Use the fruit of your choice to change it up for kids and keep the oatmeal interesting.

Fruit Nachos

INGREDIENTS:

  • 1 pkg. flour tortillas
  • 1/2 cup sugar
  • 1 tsp. ground cinnamon
  • non-stick cooking spray
  • 1 container yogurt (your choice of flavor)
  • 3 cups sliced fruit (your choice)
  • 2 cups assorted berries (your choice)

 

DIRECTIONS:

  1. Preheat oven to 375 degrees.
  2. In a small bowl or plastic bag, combine sugar and cinnamon.
  3. Cut each tortilla into six or eight wedges.
  4. Place wedges in a single layer on baking sheets.
  5. Spray wedges with cooking spray.
  6. Sprinkle with cinnamon and sugar mixture.
  7. Bake 5 – 7 minutes or until wedges are light brown and crisp.
  8. Remove wedges to a wire rack to cool.
  9. To serve, place wedges on a plate, drizzle with yogurt and top with fruits.

Apple Sandwiches

If you’re looking for a good afternoon snack after the kids get off the bus or something to grab on the run to their soccer game, here’s a quick recipe:

INGREDIENTS:

  • Whole-Wheat Bread
  • Creamy Peanut Butter
  • 1/3 of a Granny Smith apple, sliced

 

DIRECTIONS:

  1. Spread generous amount of peanut butter on one slice of bread. 
  2. Place apple slices on peanut butter (overlap).
  3. Add another slice of bread.

Whole grains, fruit, protein…just add a yogurt or grab a milk and you’re good to go!
