Peanut Butter Cheese Fudge

Peanut Butter Cheese Fudge

Ingredients

* 1/2 pound sliced easy-melt cheese (recommended: Velveeta)
* 1 cup (2 sticks) butter
* 1 cup creamy peanut butter
* 1 teaspoon vanilla extract
* 1 cup chopped nuts
* 2 (16-ounce) boxes confectioners’ sugar

Directions

Lightly spray the bottom of a 9 by 2-inch square pan with nonstick cooking spray. In a saucepan over medium heat, melt cheese and butter together, then add peanut butter and stir until smooth. Remove from heat and add vanilla and nuts.

Empty confectioners’ sugar into a large bowl and pour cheese mixture over sugar. Stir until completely mixed. Candy will be very stiff.

Using your hands, remove candy from the bowl and press evenly and firmly into the pan. Because of the amount of butter in this recipe, pat top of candy with a paper towel to remove excess oil. Place the pan in refrigerator until candy is firm.

To serve, cut into squares.

Parmesan Chicken

INGREDIENTS:

  • 3 – 4 chicken breasts, cubed
  • 1/2 cup saltine crackers
  • 1/2 cup Townhouse crackers
  • 1/2 cup parmesan cheese
  • 1/2 cup margarine, melted
  • 1 can cream of chicken soup
  • 1 cup milk
  • 1 cup sour cream

 

DIRECTIONS:

  1. Crush crackers and mix with cheese in a small bowl.
  2. Dip chicken in melted margarine then roll in cracker mixture.
  3. Place in buttered 9 x 13 casserole dish.
  4. Bake at 350 degrees for 30 minutes.

After baking for 30 minutes:

  1. Mix together soup, milk, and sour cream. 
  2. Pour over baked chicken.
  3. Bake an additional 20 – 25 minutes.

Pretend Lasagna

INGREDIENTS:

  • 1 pkg. frozen chopped spinach (thawed and squeezed dry)
  • 1 cup mozzarella cheese
  • 1 jar marinara sauce
  • 1 pkg. frozen cheese ravioli
  • 1/2 cup shredded parmesan cheese

 

DIRECTIONS:

  1. Preheat oven to 350 degrees.
  2. Pour sauce on the bottom of a square baking dish to cover it.
  3. Put a layer of ravioli on top of sauce.
  4. Cover with a layer of spinach and mozzarella cheese.
  5. Repeat layers.
  6. End with sauce on top.
  7. Sprinkle with Parmesan cheese.
  8. Bake for 30 minutes.  Let stand for 5 – 10 minutes.

Cheese Dip Spread

INGREDIENTS

  • (2) 8 oz. Cream Cheese
  • 1 cup Mayonnaise
  • 12 oz. Shredded Swiss Cheese
  • 4-5 Green onions chopped
  • Hormel Real Bacon pieces
  •  

    DIRECTIONS

    1. Combine all ingredients except bacon bits and mix well. 
    2. When well blended, put in 10″ pie pan and sprinkle bacon bits on top.
    3. Bake at 350 degrees for 30-35 minutes. 
    4. Serve hot with sliced French or Italian Bread. 

    TIP:  If you split this recipe into two smaller dishes before baking, you can freeze one for later (just thaw and bake).  Great for unexpected company.
