Swedish Cake

INGREDIENTS:

  • 2 cups sugar
  • 2 cups flour
  • 2 tsp. baking soda
  • 1 (20 oz.) can crushed pineapple (do not drain)
  • 2 eggs
  • 1 tsp. vanilla
  • 1/2 cup pecans, chopped
  • cream cheese frosting

 

DIRECTIONS:

  1. Combine sugar, flour, baking soda, pineapple, eggs, vanilla, and pecans. 
  2. Mix well.
  3. Pour into a 9 x 13 ungreased pan (can spray with Pam if preferred).
  4. Bake at 350 degrees for 30-40 minutes.
  5. Frost with cream cheese frosting.

Kentucky Pecan Pie

INGREDIENTS:

  • 1 cup white corn syrup
  • 1 cup brown sugar
  • 1/3 tsp. salt
  • 1/3 cup butter or margarine, melted
  • 1 tsp. vanilla
  • 3 eggs, slightly beaten
  • 1 cup whole pecans, shelled
  • Unbaked pie shell.

 

DIRECTIONS:

  1. Combine corn syrup, brown sugar, salt, butter, and vanilla.  Mix well with mixer.
  2. Add slightly beaten eggs and mix well.
  3. Pour mixture into a 9-inch unbaked pie shell. 
  4. Sprinkle pecans over the top.
  5. Bake in a preheated oven at 350 degrees for 45 – 60 minutes.
  6. It is done when a knife inserted in the middle comes out clean.

Easy Apple Crisp

Autumn is the perfect time for apple recipes!

INGREDIENTS:

  • 5 – 6 apples, peeled and sliced
  • 1 cup flour
  • 2/3 cup sugar
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 1 egg, unbeaten
  • 1/2 cup oil
  • 3/4 tsp. cinnamon

 

DIRECTIONS:

  1. Grease an 8-inch baking dish.
  2. Fill with sliced apples.
  3. In a separate bowl, crumble together the flour, sugar, baking powder, salt, and the unbeaten egg.
  4. Sprinkle mixture evenly over the apples.
  5. Pour oil over topping.
  6. Sprinkle with cinnamon.
  7. Bake at 350 degrees for 35 – 40 minutes.
  8. Serve warm.

Fruit Nachos

INGREDIENTS:

  • 1 pkg. flour tortillas
  • 1/2 cup sugar
  • 1 tsp. ground cinnamon
  • non-stick cooking spray
  • 1 container yogurt (your choice of flavor)
  • 3 cups sliced fruit (your choice)
  • 2 cups assorted berries (your choice)

 

DIRECTIONS:

  1. Preheat oven to 375 degrees.
  2. In a small bowl or plastic bag, combine sugar and cinnamon.
  3. Cut each tortilla into six or eight wedges.
  4. Place wedges in a single layer on baking sheets.
  5. Spray wedges with cooking spray.
  6. Sprinkle with cinnamon and sugar mixture.
  7. Bake 5 – 7 minutes or until wedges are light brown and crisp.
  8. Remove wedges to a wire rack to cool.
  9. To serve, place wedges on a plate, drizzle with yogurt and top with fruits.

Buckeyes

Football season is upon us!  If you are an Ohio State Buckeyes fan, you will love this recipe.  If you’re not, go ahead and make them anyway (just change the name).  This is an easy recipe that a young child can help with.

INGREDIENTS:

  • 3 cups creamy peanut butter
  • 3/4 cup butter, softened
  • 2 T powdered sugar
  • 16 oz. dipping chocolate

 

DIRECTIONS:

  1. Mix together peanut butter, softened butter, and powdered sugar. 
  2. Form into small balls.
  3. Melt dipping chocolate.
  4. Using a toothpick, stick toothpick into a ball, dip balls into melted dipping chocolate until almost covered.
  5. Refrigerate until ready to serve.

No Bake Cookies

This is another easy recipe that is great to make with kids!  Kids are home for the summer…make some fun memories in the kitchen with them!

INGREDIENTS:

  • 1 stick oleo (margarine)
  • 1/2 cup cocoa
  • 2 cups sugar
  • 1/2 cup milk
  • 1/2 cup peanut butter
  • 1 teaspoon vanilla
  • 3 cups oatmeal

 

DIRECTIONS:

  1. Mix margarine, cocoa, sugar and milk over stove and boil one minute. 
  2. Remove from heat and stir in peanut butter, vanilla, and oatmeal.
  3. Drop by spoonfuls onto wax paper and wait for them to firm up.
  4. Enjoy!
