Ambrosia

INGREDIENTS:

  • 1 cup diced pineapple
  • 1 cup mandarin oranges
  • 1 cup shredded coconut
  • 1 cup mini marshmallows
  • 1 cup sour cream

 

DIRECTIONS:

  1. Mix together pineapple, oranges, coconut, mini marshmallows and sour cream.
  2. Chill.

Fruit Nachos

INGREDIENTS:

  • 1 pkg. flour tortillas
  • 1/2 cup sugar
  • 1 tsp. ground cinnamon
  • non-stick cooking spray
  • 1 container yogurt (your choice of flavor)
  • 3 cups sliced fruit (your choice)
  • 2 cups assorted berries (your choice)

 

DIRECTIONS:

  1. Preheat oven to 375 degrees.
  2. In a small bowl or plastic bag, combine sugar and cinnamon.
  3. Cut each tortilla into six or eight wedges.
  4. Place wedges in a single layer on baking sheets.
  5. Spray wedges with cooking spray.
  6. Sprinkle with cinnamon and sugar mixture.
  7. Bake 5 – 7 minutes or until wedges are light brown and crisp.
  8. Remove wedges to a wire rack to cool.
  9. To serve, place wedges on a plate, drizzle with yogurt and top with fruits.

Apple Sandwiches

If you’re looking for a good afternoon snack after the kids get off the bus or something to grab on the run to their soccer game, here’s a quick recipe:

INGREDIENTS:

  • Whole-Wheat Bread
  • Creamy Peanut Butter
  • 1/3 of a Granny Smith apple, sliced

 

DIRECTIONS:

  1. Spread generous amount of peanut butter on one slice of bread. 
  2. Place apple slices on peanut butter (overlap).
  3. Add another slice of bread.

Whole grains, fruit, protein…just add a yogurt or grab a milk and you’re good to go!

Pineapple Casserole

INGREDIENTS:

  • 2 (20 oz.) can chunk pineapple, drained
  • 1 cup sugar
  • 6 T. flour
  • 2 cups shredded cheese
  • 1 sleeve Ritz crackers
  • 1/2 cup margarine, melted

 

DIRECTIONS:

  1. Mix together pineapple, sugar, flour, and cheese.
  2. Place in greased casserole dish.
  3. Top with Ritz cracker crumbs.
  4. Pour melted margarine over crackers.
  5. Bake at 375 degrees for 30 minutes.

Fluffy Peanut Butter Dip

INGREDIENTS:

  • 1/2 cup creamy peanut butter
  • 1 (8 oz.) container vanilla yogurt
  • 1/8 tsp. cinnamon
  • 1/2 cup frozen whipped topping, thawed

 

DIRECTIONS:

  1. Mix together peanut butter, vanilla yogurt, and cinnamon.
  2. Stir in whipped topping.
  3. Serve with a platter of fresh fruit.

Makes two cups.

Waldorf Salad

INGREDIENTS:

  • 1 (6 or 8 oz.) vanilla yogurt
  • 1 T sugar
  • 2 T orange juice
  • dash cinnamon
  • 2 green apples
  • 1/2 cup seedless green grapes
  • 1/2 cup seedless red grapes
  • 1/2 cup celery, diced

 

DIRECTIONS:

  1. Cut apples into bite-sized pieces, dice celery, cut grapes in half and mix together in a bowl.
  2. Mix yogurt with sugar, cinnamon and orange juice.
  3. Pour over fruit.

Apple Dip

This is a quick and easy recipe for kids to use to dip their apple slices!

INGREDIENTS:

  • (1) 8 oz. package cream cheese
  • 1/2 cup brown sugar
  • 1 tsp. vanilla

DIRECTIONS:

  1. Mix together the three ingredients.
  2. Chill.
  3. Serve with apple slices.
