Easy Grilled Tri Tip

Ingredients

  • 1/4 cup soy sauce
  • 1/4 cup olive oil
  • 2 tablespoons water
  • 2 cloves garlic, peeled and chopped
  • ground black pepper to taste
  • 4 pounds beef tri tip, cut into 1/2 inch slices

Directions

  1. In a large, non-reactive bowl, blend the soy sauce, olive oil, water, garlic, and pepper. Place the beef tri tip in the marinade. Cover, and marinate in the refrigerator at least 4 hours.
  2. Preheat an outdoor grill for high heat, and lightly oil grate.
  3. Grill the beef slices 3 to 5 minutes per side, or to desired doneness. Discard remaining marinade.

Hoppin’ John Soup

INGREDIENTS:

  • 1 lb. sausage
  • 1 large onion
  • 2 cans black eyed peas (reserve juice)
  • 1 cup dry rice, cooked according to pkg. directions
  • 1 pkg. Lipton Onion Soup Mix
  • 2 T chicken bouillon
  • hot sauce (any brand)

 

DIRECTIONS:

  1. Fry sausage with onion, then drain.
  2. Bring three cups liquid (black eyed pea juice plus water) to boil.
  3. Combine liquid with sausage, peas, soup mix, and bouillon.
  4. Cook 15 - 20 minutes.
  5. Add rice and cook five more minutes.
  6. Serve with hot sauce on the side (per taste)

Barko Burgers

INGREDIENTS:

  • 1 lb. hamburger
  • 1/2 cup ketchup
  • 3 T horseradish
  • 1/2 cup onion, chopped
  • salt & pepper
  • garlic powder

DIRECTIONS:

  1. Mix together the hamburger, ketchup, horseradish, onion,  garlic powder, salt and pepper.
  2. Spread 1/4 inch thick on open face of bun. 
  3. Place on baking sheet with foil.
  4. Bake at 400 degrees for 5 minutes, then broil until done. 
  5. Remove from heat and top with slice o cheese.
  6. Place back into oven until cheese melts.
