Easy Hummus

Ingredients

* 1 (15 ounce) can garbanzo beans, drained, liquid reserved
* 1 clove garlic, crushed
* 2 teaspoons ground cumin
* 1/2 teaspoon salt
* 1 tablespoon olive oil

Directions

1. In a blender or food processor combine garbanzo beans, garlic, cumin, salt and olive oil. Blend on low speed, gradually adding reserved bean liquid, until desired consistency is achieved.

Beef on Noodles

Ingredients:

1 cup flour
1 teaspoon salt
1 1/2 teaspoons pepper
2 tablespoons thyme
1 pound beef round steak, cut into 1 inch cubes
4 tablespoons oil
2 large yellow onions
1 tablespoon sugar
1 cup beef broth
6 carrots, cut into thin 1 inch strips
1/3 cup parsley, chopped
1 package egg noodles, cooked

Directions:

Mix flour, salt, pepper, and thyme in a bag. Add the round steak and shake well. Then brown the beef, a small batch at a time, over medium to high heat. Remove from saucepan and drain the oil.

Cook onions in 2 tablespoons oil over low heat until brown in a large saucepan. Add the sugar and cook for a few minutes to caramelize. Remove from saucepan. Add beef broth to saucepan. Add carrots and bring to a boil. Then add back the caramelized onions and round steak and stir.

Pour into a casserole dish and cover the top with foil. Bake in a 350F degree oven for 30 minutes.

Serve over egg noodles and top with chopped parsley.

10 Minute Szechuan Chicken

Ingredients:

4 chicken breasts* — skinned, boned
3 tablespoons cornstarch
1 tablespoon vegetable oil
3 cloves garlic — minced
5 tablespoons soy sauce — (low salt)
1 1/2 tablespoons white-wine vinegar
1 teaspoon sugar
1/4 cup water
6 green onions — cut into 1″ pi
1/8 teaspoon cayenne or to taste

Directions:

Cut chicken *(these are 1/2 breasts, as you buy them in the market) into 1 1/2 inch cubes. Lightly toss with cornstarch in bag to coat. Heat oil in skillet or wok; stir-fry chicken and garlic until lightly browned. Add soy sauce, vinegar, sugar and water.

Cover and cook 3 minutes or until chicken is cooked through. Add green onions and cayenne; cook uncovered about 2 minutes longer.

INGREDIENTS:

  • 1 cup diced pineapple
  • 1 cup mandarin oranges
  • 1 cup shredded coconut
  • 1 cup mini marshmallows
  • 1 cup sour cream

 

DIRECTIONS:

  1. Mix together pineapple, oranges, coconut, mini marshmallows and sour cream.
  2. Chill.

Speedy Pizza that Kid’s Love!

Ingredients:


2 plain naan breads
6 ounces cheese (grated)
1 tin chopped tomatoes
3 tablespoons tomato puree
2 ounces of ham (chopped)
salt
pepper

Preparation:

Put naan breads on a baking tray


mix the chopped tomatoes and the puree and spread over the naans
sprinkle with the cheese, top with the ham and season. Place in oven at 450′ for 10-15 minutes, until crust browns and cheese melts.


Simmer This One All Day Long!

This Chicken Noodle Soup will make your house smell like home!

Prep Time: 10 Minutes

Cook Time: 1 hours 20 minutes or All Day Long!

Ingredients:

  • 3-4 chicken thighs or breast
  • 5 Cups Water
  • 1 teaspoon salt
  • 1 teaspoon poultry seasoning
  • 1/2 teaspoon pepper
  • 1 stalk celery cut up
  • 1 small onion cut up
  • 2 carrots cut up

Preparation

In Dutch oven simmer on low covered until chicken starts to seperate from the bone. Once that happens remove bones and skin and cut up chicken add back to broth. Keep simmering adding salt and poulty seasoning to taste. You can also add more water if you like more broth (just remember to re-season when you do). A half hour before serving add 1 cup or more of medium noodles.

Prepare in the morning and cook all day long!
